Shredded Chicken
ingredients
Yellow Onions 4, halved, and sliced
Garlic 4 cloves, crushed
Bay Leaf 1
Black Peppercorns 1 Tbl.
Chicken Thighs skinless and boneless about 3 lbs.
Rice vinegar ½ cup
Coconut Aminos ½ cup
Sugar 1 Tbl.
Adobo Seasoning 1 Tbl.
method
Spread half the sliced onions on the bottom of the slow cooker. Add 2 of the garlic cloves, the bay leaf and the peppercorns.
2. Arrange the chicken in a single layer on top of the onions.
3. Top with the remaining onions and garlic.
4. Mix vinegar, soy sauce, sugar, and adobo seasoning, then drizzle over the Ingredients:
5. Cover and cook on high for 4 hours or low for 8 hours. Remove and discard the bay leaf.
6. Shred and serve, spooning remaining juices.
notes
If you dont have Coconut Aminos, you can substitute Low Sodium Soy Sauce.
