Spicy Korean Gochujang Chicken

ingredients
1 lb (450g) chicken thighs, boneless and skinless
2 tbsp gochujang (Korean red chili paste)
1 tbsp soy sauce
1 tbsp honey
1 tbsp sesame oil
3 cloves garlic, minced
1 tsp ginger, grated
1 tbsp rice vinegar
1 tsp sesame seeds, for garnish
2 green onions, chopped, for garnish
Salt and pepper, to taste
method
In a large bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, salt, and pepper. Mix well to create a marinade. Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the marinated chicken thighs on the prepared baking sheet, spreading them out evenly. Bake for 25-30 minutes, or until the chicken is cooked through and has a nice caramelized glaze.
Once done, remove from the oven and let rest for a few minutes. Sprinkle with sesame seeds and chopped green onions before serving. Enjoy this spicy and flavorful chicken with steamed rice or in a lettuce wrap for a delicious meal!
