Stewed Chicken with Rice and Vegetables

Super easy and flexible recipe. One of the beauties of this recipe is that nearly any combination of vegetables, rice, and seasoning can work.

ingredients

Mixed Vegetables (frozen or fresh) – 2 pounds • Rice – 1 cup • Chicken Thighs - 1 1?2 to 2 lbs. • Seasoning – 2 Tbl. • Chicken Stock – 1 quart

method

    Place half of the vegetables in the bottom of the crockpot, then layer rice, chicken, seasoning, and end with the rest of the vegetables. Pour in chicken stock and cover. Cook for four hours on HIGH or 8 hours on LOW.

A two pound bag of frozen mixed vegetables makes this super easy. Wild rice, white rice, or long grain brown rice all work really well. Any seasoning blend works well. I prefer Mrs. Dash blends be cause they are salt-free.
