Creamy Cajun Chicken Bites with Penne in Garlic Butter Sauce

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • method

    1. Bring a pot of salted water to a boil and cook the penne according to the package directions. Drain and set aside.
    2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 6–7 minutes until browned and fully cooked. Transfer to a plate.
    3. In the same skillet, lower the heat to medium and melt the butter. Stir in the minced garlic and cook for about a minute until fragrant.
    4. Sprinkle in the Cajun seasoning, smoked paprika, salt, and pepper. Pour in the heavy cream and chicken broth, stirring to combine. Let the sauce simmer for 4–5 minutes until it starts to thicken.
    5. Add the Parmesan cheese and stir until melted and smooth.
    6. Return the chicken to the skillet and add the cooked penne. Toss until everything is coated evenly in the creamy sauce.
    7. Sprinkle with fresh parsley before serving. Enjoy while hot.
