Coconut Avocado Dip
ingredients
1 large ripe avocado, peeled and pitted
• ¼ cup no added sugar coconut yogurt
• 2 tablespoons toasted pine nuts
• ¼ cup fresh cilantro
• 1 large garlic clove, peeled
• 1 tablespoon jalapeño pepper, chopped
• 2 tablespoons extra virgin olive oil
• 1 tablespoon fresh lemon juice
• 2 tablespoons champagne vinegar or coconut vinegar
• 1 teaspoon fish sauce
• ¼ cup filtered water (adjust according to desired consistency)
