Pistachio Yogurt Herb Sauce

ingredients

  • 1/2 cup plain Greek yogurt
  • 1/4 cup shelled pistachios
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 cup fresh basil or parsley
  • Salt and freshly ground black pepper to taste
  • 1–2 tbsp water (to thin, as needed)
  • method

    1. In a blender, combine yogurt, pistachios, olive oil, lemon juice, garlic, and herbs.
    2. Blend until smooth, adding water as needed to reach a pourable consistency.
    3. Season with salt and pepper to taste. Chill before serving.

    Perfect With: Burrata, heirloom tomatoes, arugula, roasted carrots, or grilled lamb.
