Pistachio Yogurt Herb Sauce
ingredients
1/2 cup plain Greek yogurt
1/4 cup shelled pistachios
2 tbsp olive oil
2 tbsp lemon juice
1 clove garlic
1/4 cup fresh basil or parsley
Salt and freshly ground black pepper to taste
1–2 tbsp water (to thin, as needed)
method
- In a blender, combine yogurt, pistachios, olive oil, lemon juice, garlic, and herbs.
- Blend until smooth, adding water as needed to reach a pourable consistency.
- Season with salt and pepper to taste. Chill before serving.

Burrata, heirloom tomatoes, arugula, roasted carrots, or grilled lamb.
